Pickles and Preserves

Pickles and preserves feature prominently on the Georgian table. These vegetables compliment the main courses. They add to the overall flavor. One makes these recipes and uses them as one wishes. They do store very well.

Cabbage is consistently pickled and preserved. I hate cabbage. The only cabbage I like is prepared under Russian auspices --- “Galubtsi with red sauce”. The rest they can do whatever they want to with. They can take the Sour Krauft and bury it in Germany. I will never miss it.

But here is a dish for the rest of you that do like cabbage. I am an open-minded person with no preconceived prejudices. Enjoy it!
