Mtsvane Lobios Mkhali
(Green Bean Purée)

Among the most popular vegetables in Georgia are green beans or lobio, which are prepared in many different ways---with butter and eggs, with nuts, with tomatoes, and with plum sauce.

Serves 4 to 6

1 pound of green beans
1/2 cup of shelled walnuts
3 garlic cloves, peeled
1/2 cup of chopped cilantro
1/2 cup of chopped parsley
1 tablespoon of chopped fresh dill
1 tablespoon of red wine vinegar

Trim the beans and cook them in boiling water until they are very soft. Drain.

Grind the walnuts in a food processor. Briefly process them with garlic and herbs. Add beans and process to make a purée. Stir in the vinegar and cool to room temperature before serving.
