(Green Bean Salad)
The dressing for this simple salad is
similar to a French vinaigrette, though zestier. Use
very fresh, tender beans.
Trim the beans and cook them in boiling
slated water until just tender, about 8 minutes. Drain well and mix
with the remaining ingredients. Chill for several hours, but bring to
near room temperature before serving.
1 pound of young green beans
1 large garlic clove, peeled and minced
1/2 cup of chopped cilantro
3 tablespoons of olive oil
2 tablespoons of red wine vinegar
